They show the quinoa chips about half way through. Has anyone made these before? Does have a recipe/procedure they could share?

Cook (overcook) for about 20 minutes. Strain and place on silpat or parchment. Place another parchment or silpat on top and with a rolling pin flatten. The quinoa will (should) automatically bind. Allow to dry in one big piece. Take pieces and deep fry for a few seconds.
As an aside, this works because of the starch being available from over cooking. What I haven't tried (but may also work) is to cook the quinoa, blitz 1/2 of it (which will expose the starch) and try flattening.
I've done it for quinoa sushi and it "sticks" together quite well. It's important to note that you won't get the same "puff" as you will from wild (or other) rice.
