Horseradish Dome

I went to Commonwealth in San Francisco a few year ago. They had a dish with a horseradish dome . You had to break the dome to get to the king salmon, salmon roe and crystal lettuce. Has anyone made a dome like that? If so how do you do it? I would like to make them but preferably not with liquid nitrogen.

I have never seen this but perhaps you could build something using egg whites, horseradish and salt- ratios would have to be eyeballed, probably be best to dehydrate the horseradish first, mix with the egg whites and then build the dome. I am guessing this dome was placed over the salmon, roe and lettuce before service.
