Looks delicious! But I hate to boil good corn. I just toss the ears--shuck and all--into the microwave for about 8 minutes (1200W). Cut off the stem end of the corn, peel the shuck toward the tip about 3", grasp with a hot glove, pull and twist. The silk comes just about completely off with the shuck. And the corn tastes fantastic. Try it with a little butter and salt. Then nuke three more ears for the recipe; you're gonna eat the first three.

This was a super fast meal I just made up in my head. 3 boiled ears of corn, shave off the kernels. Bacon grease & Irish butter melted in hot skillet. Cooked about 5 oz of diced Tasso until browned (I would guess Speck could work fine if you can't get Tasso). Add corn to pan and sear for 2-3 minutes. I added garlic powder, cayenne, black pepper, and smoked paprika. Deglazed pan with 1/2 cup stock and added 8 large Gulf shrimp and cooked until all of the stock had evaporated and shrimp were cooked through. It's very simple but the combination of flavors was very nice.
