or anyone else offer some guidance on making the iSi microwave sponge cakes gluten free? Would a simple substitution with say almond flour or even rice flour work?

The gluten free microwave cake recipes I have seen use either homemade gluten free flour (rice flour/cornflour) or store bought gluten free flour mixes and they seem to work.

It'll work, I make low-sugar/low-starch almond flour cakes all the time, but I can't say that they're close to the MC cakes because I haven't tried the exact recipe.
Perhaps a gluten-free cake mix would produce a good result.

Brendan, Did you ever get this to work? I was thinking of trying a GF cake flour (recipe from gluten free on a showstring blog) and substituting by weight for the regular cake flour. Let me know if you had success with this.
