Flourless Carrot Cake

Hi, 

Looking to make the flourless carrot cake but don't have a pressure cooker. I saw a post in the forum from a while ago that said it could be done by braising the carrots in a normal pan but this would result in a duller colour/flavour

Would it be possible to add some coloured food dye (gel/liquid) to get a more vibrant colour?

The colour won't have the caramelized color/brightness, however, I don't envision food coloring being necessary (IMHO). With that said, After peeled and cored, perhaps slicing thin to improve access to surface area would improve the opportunity for color extraction. Commonly they are left in larger pieces......The other consideration would be to cut them, then freeze them over night. You can see this in strawberries for example and if I recall, there was a paper doing something similar to carrots and the extraction of carotenoids after freezing them though this application was obviously not their final goal.
