One of the simplest and most amazing projects I've dwelled into has definetly been black garlic. I started off on the 25th of last month on a crockpot sealed tightly and wrapped in foil with 4 large garlic bulbs, each also wrapped, all warmed up with a heat-cable and controlled by a thermostat.
After a month and 2 sneak-peeks, today was the grand day. I unwrapped it all and... Out of 4 bulbs I got a 20g yield of fully blackened, soft and deliciously caramelized black garlic.
Now I believe this was due to irregular heat distribution inside the pot. So today I changed it up, re-wrapped it all and am gonna give it around another week for the rest of the bulbs to go from a mid-stage dark brown to a finished product black.
This is incredibly rewarding as it is such an expensive ingredient and yet so easy to make at home with little expense.
I encourage anyone to try it out and share your experience! Around here we're still testing stuff out but damn.. It's totally worth it, just look at them!
