Vacuum Chamber Pickles

I've been experimenting with different combinations with my chamber recently... Basically trying to infuse anything plant based with any liquid I can find. I love the simplicity and the seemingly endless range of options.

Some big success and big failures. The biggest success so far has been with cucumbers in a mix of Sauternes, jasmine tea, apple juice, cider vinegar, balsamic white vinegar, dill, a little malic acid, plus the obligatory salt, pepper corns, coriander etc. Awesome. Also pepsi water melon, balsamic tomatoes, apple infused apples, radishes etc..

This machine is particularly dangerous at a house party. A bag full of fruit and a well stocked liquor cabinet can easily result in things going off the rails...

I'm wondering if anyone else has come up with any magical combinations that they would be willing to share?

Awesome, glad to hear it came out well! I served them on a stick like a lollipop as a palate cleanser at my last dinner. I paired it with a martini glass full of pho broth which was a nice little break in the dinner.

I gave that a try, Brendon - I'm a big fan. I had to sub rice wine vinegar for white wine vinegar as it was all I had, but it still worked very well.

Another evening of making a mess resulted in beetroot stems infused with coco nib balsamic vinegar last night. Some of those with duck liver pate on ultra crispy toast was heavenly!

Your in luck, it was one of the first recipes I decided to write parametrically so it's scalable. Hopefully my math was right.

I did rye, cinnamon, honey, clove, thyme, and apple slices and it was delicious. I did watermelon with fish sauce, lime juice, sugar, and rice vinegar which turned out to be an awesome pickle.
