Pork Belly cooked sous vide at 63C for 24h in a traditional chinese red braise. Reduced the heck out of the braising liquid and served with spinach and rice.

Can I ask what your braise consisted of? I've played a bit with a very basic one that was mostly Shao Xing wine and dark soy.

1 Cup Shao Xing
1/4 Cup light Soy sauce
1/3 Cup Sugar
1 1/2 inch stick Cinnamon
3 whole Star Anise
1 tsp ground pepper
5 dried chilis
2 scalions, sliced
1 inch piece ginger, sliced
