Nice work- what was the sauce you had underneath the french style peas?

It's just a simplified version of the traditional recipe, shallot, garlic sweated off in butter, add pancetta and render the fat, braise peas in the rendered fat from the pancetta, add stock (veg/chicken) - enough to just submerge the mixture and then finish with a few tbsp of heavy cream. It's a great side, nice way of brightening up some cheap, basic ingredients

Traditionally French style peas would be podded and shelled, but these are just podded. Then they'd be finished with slightly wilted gem lettuce

Conceptual take on a normal eton mess; strawberries, cream, meringue

Lightly caramelise the top of the banana slices

arrange over Chantilly cream, add italian meringue (traditional recipe), marshmallow cube (no added flavouring) and cookie crumb

The shot glass has a sweetened banana milkshake in, using the remains of the caramel used to caramelise the bananas, add a short length of straw
