1 part sugar 3/4 part salt is a good curing ratio. Relae book has a recipe for a taco that uses cured yolks.

It's actually a warm dish and the idea was to be able to break into the runny yolk and mix it with the shiitake dashi (umami bomb) to make a sauce

Thanks Ethan. For some reason I was thinking of the type of cured egg yolk that becomes hard enough that you can grate with a micro-plane. But you wouldn't put a whole hard egg yolk in your salad (which by the way, looks delicious).
