Can I make a cold foam using gelatine and cocoa water in a siphon or do I have to put in some cream to make it more compact

Yes, you can actually do it without a siphon using water, gelatine, bowl of ice to set the choc, water and gelatine in...........a whick and allot of breathing. :-)
