fruit tuile

Hi,

I've been trying to make tuile from fruit. I've tried slice pineapple nd apple very thin and than dehidrate it.

so far te trials are anseccessful.

the color and shape is not esthetic.

to I need special tools in order to produce it?

Depending on the desired texture, a fruit leather can be taken beyond the leathery stage and made more crisp. If shape is desired, you may try cutting it at the leather stage before dehydrating it further.

For every 100g fruit, about 5g of oil and.2g Xanthan per MCAH. I also add 1-3% of Ultratex 8 when a crisp txture is not desired, but it is not necessary for either the leather or crisp.
