I would tend to agree with
@inthe
cards. That said, if I were to try without the carageenan, I would probably start with a combination of Gellan and Locust bean gum. You would however, probably need to use a higher heat and a hand blender for hydration prior to pouring. Have done it with savory custards with decent success. If you try it, let us know how you make out.

I am fairly sure that carrageenan is the most essential ingredient in that recipe. Don't fear carrageenan, you have probably been eating foods that contain carrageenan most of your life.

If hours of watching the Food Network has taught me anything, it's that you should just use love and your heart. Maybe cry as well after you've made it, guaranteed to taste excellent.
