Potato salad was considered a staple at picnics and barbecues. This version uses for sweet potatoes, sweet recipe of the light is perfect, either as a starter or a meal-in-one healthy dish. It can be served hot or at room temperature, making it versatile for hot meals at home in the spring nights or potluck offers cool on a hot day. It is one of my favorite dishes of the game, and my friends and family that I love!

Cinnamon raisin bread is the key to the flavor of sweet potato salad. Add texture to baked sweet potatoes. Honey sauce brings the sweetness of raisins and potatoes. If you like a little heat, sprinkle the dish with Sriracha sauce.

Potato SaladServes 10Ingredients1 loaf gluten-free cinnamon raisin bread, cut into 1/2 inch cubes2 Tbsp. organic ghee (I used Organic India brand)5 cups peeled sweet potatoes, cut into 1/2 inch cubes1 large red onion, thinly sliced1 teaspoon sea salt1/4 teaspoon pepper1 cup freshly squeezed orange juice2 large organic eggs1 cup organic vegetable broth1 tablespoon organic honey1/4 cup chopped raw pecans3 tablespoon finely chopped fresh basil3 tablespoon extra-virgin olive oil2 baking apples (such as Granny Smith), diced into 1/2 inch piecesDirectionsPreheat to 350°F.Prepare a large deep baking dish with nonstick baking spray; set aside.Spread bread cubes in single layer on large baking sheet. Bake for 10 minutes. Remove from the oven and set aside to cool. Place bread pieces aside in a large bowl.Melt butter in a large skillet over medium heat. Add sweet potatoes, red onion, sea salt and pepper. Sauté until onions are soft, about 5-7 minutes. Add freshly squeezed orange juice and bring mixture to boil. Cook until all the liquid is absorbed and sweet potatoes are soft and tender. Remove from heat and add sweet potato mixture to the baked bread cubes.Whisk eggs and vegetable broth in medium bowl. Add to the sweet potato mixture along with honey, pecans and fresh basil. Toss to combine. Transfer to the prepared deep baking dish.Bake for 40 minutes or until golden brown.Remove from the oven. Set aside to cool for 10 minutes before serving.Serve warm or at room temperature.
