Sweet Potato Fries

Hello all,

I am wondering if anyone has a recipe/technique for making perfect sweet potato fries in the deep fryer. I have heard that using corn starch helps to get them crispy, but would like to find a recipe to follow. If anyone at CS reads this, I would be thrilled if you could add sweet potatoes to your other French fry recipes/lessons. Please HELP!

We have talked about this before, but if I remember well no one had a great method and we were mostly speculating a bit.

One idea would be to gently boil (or maybe sous vide at around 80°C), then a long drying step in the fridge. Then tossing in starch, maybe a combo of corn starch and potato starch, before frying.

Another thing to try is probably doing a double fry, and coating in starch both times to try and build up a big crust. I think just realistically you're going to have to experiment a bit to get the result you're after.

There was a technique featured on America's Test Kithcen, it involved boiling the fries in water and putting them immediately in a cornstarch slurry. I tried it once and they turned out great, having only tried it once does not make me an expert just opinionated.
