I am new to this site.. got hooked looking at the photo and video of this.
I am not a big fan of Malted milk. can I just leave that out or should I adjust the other ingredients to make up for these 20g?

The maltose in the malted milk is sweeter than lactose in milk though so you may need to reduce regular milk powder and add a bit more sugar or another sweetener to make up for the difference (if you think it needs it).
The maltose also helps with the browning/Maillard reactions. The sugar already in the recipe may be enough but if they are too pale, the extra sugar might help with that as well.

You could sub the malted milk powder with regular milk powder or buttermilk powder.
