a dog park friend hooked me up with some beautiful Thai basil and chives so I threw together a nice bun bowl with Vietnamese meatballs

This must be good, my mouth started watering while reading the ingredients.

I kind of eyeballed this version but basically a pound of pork, about a 2" know of ginger minced fine, two large garlic cloves minced fine, about a dozen chives minced, half of a large shallot, fish sauce, sambal, sesame oil, and a touch of shaoxing wine. I like to squeeze it all together with my hands to make a tacky paste and then I season with salt and pepper on the outside and pan sear, flip, and then finish in a 350F oven.
