Pastrami holding time

How long can the beef be held in the refrigerator while in the curing bath? I'm not sure if at that point it is safe for a long time or not. I got called out of town so it has been much longer than the 7 days from the recipe.

Hi Steve that much depends on the amount of salt used and the temperature in your fridge. Most probably also how "fresh" the meat was before it went into the brine.
