This may be the best sauce I've ever made. I should have measured but I was throwing together because was in a hurry to finish it in time for dinner and get a burner free. Here are rough measurements, I'll try and reproduce and measure sometime because this is going to be a staple.
2 peaches, pealed and cut up
1 mango, peeled, rough cut
Toasted Sesame Oil 2tsp
Gochujang, maybe about 1 tbs
Sugar 1tbs maybe 2 tsp
Mirin about a tsp
Lite Soy Sauce This i'm really not sure how much, I am going to guess 35ml about
Peaches and Mango Into cold pan, turned onto medium+ heat. Once pan got to temp, put in the Sesame oil, stirred and let sit for a minute. I then poured the Gochujang over them, and the sugar and mirin, and mixed it and let it sit. Once it had that look like it needed liquid, about a minute or two, I poured in the soy sauce and let it come up to a simmer and stayed that way till I noticed it thickening, about 3-5 minutes. I then put into blender, pulsed it a few times, back into the pan to reduce just a bit more and it was done.
It is somehow AMAZING.
