Flourless carrot cake?

The carrot cake recipe from this website uses two ingredients - iota carrageenan and kappa carrageenan which are pretty expensive/hard to find and so i was wondering if anyone knows if agar agar is an acceptable substitute or should i just buy kappa and iota carrageenan anyway?

I doubt agar will give you the tender results you're looking for.

Agreed. You could try it, but will get a very brittle gel. Try modernist pantry for small portions of carageenans. They'll last a good while, and useful to have on hand.

Would agree with the above. Will work, but will be brittle. Gellan F would also work but would be brittle (but better flavor release than agar). You "could" try combining, Gellan, LBG and Xanthan which will give it a custardy mouthfeel but may not stand up as well and set time will be longer. Agree 100% with Brian, try MP and get the smaller amounts.

50g of each will last you a year, and you will find them both to be VERY handy when used as an ice cream stabilizer. Total cost is less than $20 with shipping, that seems cheap enough to me... go for it!
