Ginger Beer

I drink Reeds ginger beer for upset stomachs. I have tried many methods to reproduce this flavor so I can make my own less sweet version. I just having got it perfected yet.

Reed’s Original Ginger Brew was our first creation, and is a Jamaican recipe for homemade ginger ale using 17 grams of fresh ginger root, lemon, lime, honey, cane sugar, pineapple, herbs and spices.

Ingredients: Sparkling Filtered Water (Sweetened by a blend of raw cane sugar, pineapple juice from concentrate and honey), Fresh Ginger Root, Lemon and Lime Juices from concentrate and spices. Non Alcoholic. Free of Preservatives, Caffeine, Gluten & GMO’s.

I figured this would be a good start. Maybe research and find an old Jamaican Ginger ale recipe so that you can find out what spices are typical in them. Then I would just experiment based on their list of ingredients and obviously cut back on the sweeteners until you find what works best for you. Maybe go with local raw honey to avoid the loss of nutrients due to pasteurization. May as well keep your sweetener healthy. If you could concentrate it down into a syrup and you had a soda Stream machine you can pretty much make it as you need it. I just thought about that because I think I'm going to try this now. If I have any success or failure worth reporting I'll let you know.

I've made the Jeffery Morgenthaler ginger beer many times. I'm sure you could tweak it pretty easily to make a more Jamaican style. From a quick glance at recipes around the web I'd start by going 50/50 lemon and lime juice and adding a couple of cloves and a little allspice to the simple syrup and then playing with it from there.

When I lived in Beijing my AYI used rice ginger lemon and raisins w no yeast. Took a long time but was kick ass ginger beer. Once she forgot to let off pressure and a gallon plastic jug erupted in the kitchen. Smelled like ginger for weeks.

I think I'm going to try to make Ginger concentrate by putting shredded ginger. just a little sugar and 151 in the whipping siphon and charge with nitrous. This should make a good soda concentrate to make batches of ginger beer. The other recipes sound fantastic but I am disabled and there just too much work to add to my husband's already insane schedule.
