Those Jello Shots remind me of something from Jose Andres' Think Food Group. Some awesome hardcore modernist food porn videos they put out a few years ago. Good stuff.

I'm very interested in those jello shot orange slices. Do you have a recipe or vid I can reference? I am very curious how you get the jello mixture back into the orange rinds. Nice looking meal!

One thing to note, it isn't easy to get the pulp out of the clementines without ripping a hole in the bottom. Do your best. I put a piece of painters tape over the stem hole of the ripped one with varying levels of success. Make sure you get more clementines than the recipe calls for as there will be some wastage.

See recipe above, honestly it's really easy! The key is to fill halves of clementines, and then cut then in half after and trim the edges with scissors. Once the jello sets it adheres nicely to the rind and is easy to manipulate.
