I tackled the
brisket
recipe this weekend. I often measure the tastiness of a dish by how long and how deep I pronounce the word "Wow" after tasting the first bite. This piece of meat came damn near my record.

I want to try this at home but I don't have a suvide setup. Do you think I could use a slow cooker instead?

I think you will run into some major problems.
First, there will be a difference in the texture of the finally product. A slower cooker is going to boil/steam the meat even if you add in a searing step. Second, you are going to lose a lot of concentrated flavor the sous vide technique provides to the meat. Lastly, I do not think you will be able to replicate the bark building step- you'd end up with dried out, over cooked brisket.
But, you can always experiment and I am sure you will have plenty of people lining up to be taste testers!
