The pigs are fed on acorns, and the very best are given a specific kind of acorn which gives it the unique and often sweet nuttiness. I can source this but my wife is another thing all together 😉

Mark me jealous for both the ham and your wife. :-) I've had parma (though not bayonne) and still not the same nuttiness I seem to taste in the iberico. :-)

I live near London and this is readily available in the supermarkets here, and not expensive. I bought it in a ready sliced pack and then crisped it using the microwave until it had just the right crunch I wanted- can work just as well with parma or bayonne or similar. Must be very thin sliced. Amuse-bouche bacon and egg on toast with soft brown sauce

How many wives do you have? :-) You'll have to let us know your source or experience with Iberico Jamon. I've been able to source it a few times, but is always extremely expensive (more than truffles)......
