— It's really hard to understand why these have a "use-by date". I just can't imagine they lose any significant degree of efficacy under normal storage conditions.

while we are talking about iota carrageenan, i was wondering if it's ok to use it past is use by date. mine expire in mid 2012, and last time i used it was few weeks ago and it was fine.

— it depends on how much salt and acid you have in the sauce, since these will tend to increase the setting temperature. But above 70 °C should keep it from setting.
