Johan - I've always noticed when you post meat pictures, especially lamb that when you plate, the meat appears to be sliced with the grain instead of across it. Any particular reason for that or is it down to the anatomy of the cuts you are using?

Mostly just bit and scrap cuts - I noticed I did it as well, it was 6 h so fork tender
