Hummus Pizza w/ Kafta

I made a hummus pizza, or Lizza as I like to call it (Lebanese pizza). You bake the crust, then spread the hummus on top the last 5 min. I finished it off with lamb kafta, pickled turnips and pinenuts.

Not at all! Well, its a recipe of sorts at least
-- Soak 1 cup of dry chickpeas overnight, on the counter, with 1 teaspoon baking soda. Make sure there is at least double the amount of water as the chickpeas will drink it up.
-- Next day, poor out the liquid and wash the chickpeas.
-- I use a pressure cooker. Put the chickpeas in and cover with double the water. Cook on high pressure for 15 min. If you don't have a pressure cooker you just have to boil them till tender (meaning it goes to mush when you squeeze it between your fingers, if not your hummus won't be super smooth). I am guessing at leas 40-45 min.
--***IMPORTANT: the key to smooth hummus is to make the hummus while the chickpeas are still warm. Also, make sure to strain the chickpeas first, so the hummus isn't watery.
-- In a food processor, add a clove of garlic and pulse to break it up. Add the chickpeas. Run it on high for a couple minutes.
-- These next steps, its all to taste, so feel free to adjust. Add the juice of 3 lemons, 1 teaspoon salt, and 1/3 cup to 1/2 cup tahini. I would add less tahini and increase the amount till it tastes how you like it. If you find it too thick you can add some of the cooking liquid or water. It will thicken up too once you put it in the fridge and you can always thin it out after.
It's pretty easy once you make it once. I make a big batch every ten days. Let me know if you have any questions.
