Hello , i'm pretty amazed by mirror glazes but i would like to keep it vegetarian at least but without losing the texture , shine and consistency. Is there a way to replace animal gelatin to use into Glaze? I'm afraid Agar Agar would gel too much for a glaze?! Thoughts?

Look into low methoxyl amidated pectin. I've never tried it, but there are recipes on the web.

Hello, thanks for the suggestion i forgot to say that i would like to create a chocolate mirror glaze !Cant find any recipe about a chocolate glaze with pectin.. mmm , any ideas?

If you were to boil it to a lower temperature (probably around 108 °C) and pour it you would probably get something that is could be used as a mirror-glaze when cooled.

What about pour it into cold desserts? Like MousseCake or something like that?
