Vacuum Infused Fizzy Fruit

Is it possible to make? I'm wondering if the process of vacuum infusing would break the internal cell walls making it so that the fruit couldn't retain the gas? Curious if anyone has tried this.

LOL! I was going to try this with watermelon (infused with margarita) and had the same question. Have a week before I do any test so if an answer comes up, that would be great!

It will work just fine. The carbon dioxide isn't held inside the fruit by cell walls (at least, not primarily) rather dissolves into the liquid inside the fruit. Water doesn't have any cell walls, but you can carbonate it just fine. The same should is true with vacuum-infused fruit.

I just infused some white peaches with aperol and now they're in the cooler with the other fruit and the dry ice! Really excited, I've got an open house with 30-40 neighbors coming over tomorrow, I'll report back how it turns out.

It worked pretty well! Went great with my Angostura Eye Opener Cocktail. The rest of the fruit was great too. Definitely some fruit carbonated and tasted better than others.
