Bananas and Foie go together surprisingly well. I once had a Pierre Gagnaire dish at Twist that was a chilled and seasoned banana on top of a terrine of foie gras. The texture of the two items were exactly the same, it was a brilliant pairing.

I agree! The do pair really well. I have not had the Gagnaire dish but it sounds fantastic. I thought of the flavor combo while at work and we had some extra Foie. I tried it out and surprised myself!

Yum . I have always thought of that combination but hadn't tried it. I definitely will now. Great dish
