Sous Vide Baby pork

Hi there evereyone! I just got half baby pork at the market and would like some tips about the cooking process. My idea is to Sous Vide it at 75C 5hours, I also got Jack Daniels pork rib last time I went to America, but I never used it. Should I rib it before doing Sous Vide? Any Ideas? Tks in Advance!

Ribs? Yes, the apartment ribs and or the video's from a little while back are a great starting point.

I use 65C for up to 24 h and then smoke it about 4h at about 70C. That's for baby porc leg.... Very jummy
