The first attempt with tongue was met with mixed reviews, tongue strands good, SV not so good. I was resistant to do deep fried (but may try it in the future) and thought.....what about corned beef. So.....it's small reuben .....a one bite reuben. With corned beef tongue, slow roasted roma tomato, pickled mustard seeds and arugula, served in a light rye crisp (sliced thin and dried in the oven wrapped around a tube).
