First time working with ramps, very stoked. I bought a pound of the little suckers at Whole Foods today, and I have no idea what to do with them. The two things that immediately come to mind are a compound butter and pickles. But surely there must be other uses out there?
The main issue is I gather these things 1) are highly perishable, and 2) have a very short growing seasons (like a few weeks). So I want applications that will allow us to enjoy their flavor for a bit longer.
