Truffle explosion (inspired by Alinea)-always a hit, soup and salad (chicken tortilla consomme with corned beef tongue on rye/caraway seed crisp), Warm Lamb curry foam with hidden frozen raita, celery root taco with a crab lasagna filling, short ribs served over truffled beef stock amaranth topped with korean pine nut taffy and orange margarita puree. For desert(s), margarita sorbet (joys of LN2) and caramelized banana and hazelnut gelato served over hazelnut chocolate dirt.
