Does anyone have a recipe for a Siracha-like chile sauce?

You'll find Michael Hung's fermented chili vinegar hot sauce recipe on the Tasting Table site. With success, I've substituted white balsamic vinegar for the white vinegar and several different dried and fresh chilis for those specified in the recipe. One drawback: you'll need 3-5 days for fermentation.
