Fresh Bird's eye chillies seemed to make a big difference in flavor delivery. More depth but no harshness. Which I personally missed. I can't help but to wonder if it was the soil (grown here). Obviously not a native chilli....so...(?).
Was still quite good, but miss the bite. :-)
