Grilled Pinoy-Style Pork Belly + Chocolate Coffee Brandy Mousse

Pork was marinated overnight includes garlic + soy sauce + calamansi juice (filipino lime) + banana ketchup + ginger ale + brown sugar + kosher salt + black pepper then grilled over charcoal
Mousse was whipped up in a minute following recipe here and was pretty good for such a low effort dessert. I added choc-hazelnut wafer + honey roasted cashews to add some crunch

I didn't have instant coffee and used espresso coffee ground for drip machine instead, it didn't fully dissolve in the mousse but as a lover of coffee I wasn't bothered by this at all...
