My wife was working from home today and I was bored so I started looking around at my toys trying to figure out how many I could use to make her lunch, here is what I wound up with:

digital scale

immersion blender

VP Chamber vac

VWR immersion circulator

knife

iSI whipping siphon

Microwave

small combo steam oven

are the things i used for SV scrambled eggs (25 m @162F) then added them to the whipping siphon and charged it with NO2. Took some prosciutto

and rolled it around a little cream cheese, and some sliced scallions tossed in a garlic / onion powder blend......you have got to try this....

Okay- I will be brave and try those eggs because they look absolutely delicious. Of course, I am missing a few critical bits of information but oh well- here goes nothing.

Well, that didn't exactly go as planned...

Came out of the siphon a bit soupy. This was three large eggs in SV for 25 min at 162. Did one charge on siphon.

I took note that one of your tools for this lunch was a microwave so I started to use it with mixed results.

After a few pops in the microwave, I just settled on this... basically scrambled eggs. Not bad but not what I was after. Any ideas where this went off the rails?

Im not sure I would use this much milk. Dont worry if the curds are starting to develop as long as the is enough liquid to make a thick cream like consistency when you use the immersion Or regular blender to emulsify. put the eggs in the siphon and charge with one charge of NO2. stick in in the water bath About 140 0r so , to warm back up, just a few mins,

Just looked again at your pictures. What i put in the blender was about what you had in the last picture with a tablespoon of whipping cream then into the siphon and shake it hard

I made a few incorrect guesses but that Shitake marmalade certainly pique my interest. I might have to try this again...
