cranberry sauce

i was wondering if anybody had a recipe for cranberry sauce, ideally i would love the one used in the "best thanksgiving ever" segment.

why not go for pureeing method?
don't know what you are going to use the sauce for
if you are plating it with ingredients that have really delicate aroma and flavour, I would go for making puree with agar. It's not that complicated, you just need to blend cranberry with other ingredients that you would like to add and run it through the sieve, and mix in agar agar and cool it, and it should become like jelly. then blend it again and run it through the sieve and there you have very light form of puree. if you are serving it with ingredients with strong flavour and aroma, i would just go for normal puree method (you can google this)

Cranberry recipe
Fresh cranberries - 650 g
Granulated sugar - 200 g
Salt - 5 g
Combine ingredients in a vacuum seal bag and cook at 90 °C for 25 minutes. Transfer the contents of the bag to a bowl and mix to ensure all the sugar and salt are evenly distributed into the cranberries. Transfer to your serving dish and garnish with microplane orange zest and thyme leaves.
If you prefer to cook in a pot on your stove top, combine ingredients with 100 g of water and cook covered on medium heat, stirring every once in awhile. Cook for 15 minutes, add more water if the bottom of the cranberries are starting to stick. Try the berries throughout the cooking process to ensure you cook them to your desired texture.

You can take Nicholas Gavin's recipeand tweak if you like as well (his works REALLY well!). Some considerations:
1. Substitute some fructose for sugar.
2. Puree the recipe
3. Puree the recipe with the mother stock of the main dish (e.g. turkey stock and cranberry puree).
4. Take

and make a fluid gel and carbonate in isi siphona nd serve as a carbonated fluid gel.
5. Take 3 and make a warm foam with a bit more mother stock some cream and an oil (neutral or flavored if preferred).

Completely unscientific. This is a family favorite:
1 ordinary bag cranberries
sugar (follow instructions on bag, or to taste
Water (follow instructions on bag)
1 cinnamon stick (add when cooking berries)
1 healthy shot bourbon (add when cooking berries)
1/2 cup pecans (add when berries have burst)
no more than a tsp of orange zest @ the finish
