For the oyster i use,
1.Asían vinaigrette
with soy sauce, ginger, sesame oil, rice vinegar,
chili,kimchee and cilantro.
2.Apple Foam
(chef steps recipe just without nitrogen)
3.Yuzu Air
Water
Simple sirup
Yuzu juice
Soy lecetin
