I am going through the
Siphons class right now; this morning, I tried my hand at the
Hollandaise. This is one of those recipes that, while you are making it, you have doubts that it will work as written- so, I screwed it up. I only used one charge (my reasoning was I cut the ingredients in half so half the charge). Next time, I will try a second charge to see if I can give it a bit more volume. Tasted great though!
