I ripped off the potato idea off from Rob's
post who works at an izakaya restaurant some where in Atlanta. Then I saw
Matthew Snyder's steak and decided to use beef as my stage for the potatoes. I threw a nice rib eye in the sous vide, approximated ingredients for the potatoes, made the miso mayo and a damn good, brown-looking-spicy-sweet-soy-type-sauce Rob also came up with. My kid and his buddies said "10 out 10" after devouring it like Piranhas. Oh yeah, I got some veg in there by shaving some brussels sprouts then mixing them with grated daikon and a bit of sugar.
