Question from Russian Federation Petropavlovsk-Kamchatskiy city. How cook octopus sous vide, from ocean. Take a fish and some time take octopus, try to cook sous vide from youtube receipt, this impossible to eat! Help! ))

This is a recipe that I saw, I haven't tried it because I don't have access to octopus. Clean and butcher it. Completely freeze it: at least 1 hour. Thaw it completely and vacuum seal it. Then cook at 77°C for about 5 hours. That will tenderize it and make it a much more pleasant texture. Good luck!

Actually, this is where standard cooking might yield a better result more quickly. I just place in a dry, oven safe pot with a cover and place in a 300 F oven for an hour. Cool, portion, then grill or finish as desired.
