I've been seeing those around! Always curious how they are made. I would guess some sort of meringue.

thats meringue for sure, just make a recipe and spread it thin with a spatula on a baking paper or silpat and dehydrate it. don't bake it between two baking pans, it won't get airy this way

Lime sugar
210g sugar
20g egg whites
2,5g salt
5g citric acid
15g lime juice
3 drops lime oil
Whip everything on a bowl for 10 to 12 min until soft peakish. Spread 3mm even layer on silpat and let it dry on room tempature for 3 days or on 50C for 12h. Just add more egg whites if you're having difficulties to make it air.
