Activa RM replacement

Hi
I live in Sydney and I find it very difficult to source Activa RM and am wondering if there is any other more natural or easily accessible product I can use to replace Activa RM?

"More natural" no. Transglutaminase (the enzyme name of Activa RM) is a naturally occuring enzyme, however, there's nothing out there on the market that can replace it. There are no replacements that's I've come across. As for it's availability in Australia, I found this link, and I hope it helps. They say they ship to Australia.

I live in Melbourne and usually order from Melbourne Food depot...I usually buy a lot of ingredients at once and they've always upgraded me to free shipping, not sure if they would do that for Sydney though.

In addition to the great advice below, do yourself a favour & make sure you check the prices. Quick check (no currency conversion or shipping) shows Melbourne Food Ingredient Depot is currently charging AUD$33 for 50g of Activa. Modernist Pantry: US$24 for 100g.
I noticed MFID also charges well above market prices for commonly available (i.e. any Asian grocer) items like agar agar too.

Hi Malcolm, I just stumbled on another source of cheaper modernist ingredients in Melbourne that I thought was worth sharing: Durawear, which has retail outlets in the CBD and Northcote. They get their stock from Red Spoon in NSW. Both Durawear and RS have an online presence as well. Sodium citrate = $9.35 for 250g from Durawear versus $22 for 300g from MFID.
