Thick European Hot Chocolate

This is hestons, you don't have to aerate which makes it heavier and creamy, so it depends on one's preference
350g cold water
50g dark drinking chocolate (eg.

40ml whipping cream
120ml semi skimmed milk
Pinch of salt
65g dark chocolate, broken into small pieces (minimum 60% cocoa solids)
Combine 350g cold water and the drinking chocolate into a saucepan and bring to a simmer over a medium heat. add the whipping cream while simmering, semi skimmed milk and salt, and stir to combine.
Once combined, pour over the chopped chocolate pieces and whisk to dissolve. Optional - season with Bailey's :-)
To make it lights, use a hand blender to aerate the chocolate.

As a German and big lover of Hot chocolate I understand Your post question very well. Use dark chocolate couverture and kakao powder. Ingredients: Milk, cream, kakao powder, dark chocolate couverture, salt, sugar, (Drops of ouzo or rum) . To achieve a smooth, thick dark chocolate with bitter tones like u know from belgium follow these steps. Heat milk without boiling it ( milk changes Taste after one Time boiling.) Grate chocolate couverture finely, mix under Hot milk while stir, sieve and mix gradualy kakao powder into milk chocolate base, taste, add a pinch of salt for round after taste, use sugar in small amounts, taste, add cream in small amounts and taste, add Drops of ouzo for a sharp after taste, or add drops of rum for a round after taste. I did not write amounts. Because u have to try step by step By Ur own. In the end u will achieve ur european result for sure. Write it down and be proud and happy. (If u prepare Hot chocolate for women I Found Out that they prefer the basic taste without any alcohol. Todd shewman comes close with His post. But don t use water. After taste of water with chocolate doesn t get u there where u want to get By taste. Try it Both ways and u will understand
