We had some left over chickpeas at work the other day and I wanted a snack so I fried them up and dusted them with Ras el honout spice. I was also cutting honey crisp apples at the time and ate both of them together. It was a huge flavor explosion. Over the next 5 min I grabbed everything around me that was "Mediterranean market" in flavor to me and came up with this dish.

Honey crisp apple cones filled with black currant and pomegranate seed, fennel fronds, ras el hanout crispy chickpeas, grilled eggplant, olive oil and manchego cheese. It was really good fall flavors. Id recommend as el hanout spice with apple guys.
