When you go to register it kicks you to a Kendall College online program. The Course Details are:
"The first in the Kendall/CREA Sous-Vide Professional Education Series, this course introduces the culinary professional to the sous-vide process. From the historical evolution of the process and the HACCP critical control points unique to sous-vide, to the modern day application in a foodservice establishment, the Sous-Vide 101 course is a robust, multimedia-rich look into this revolutionary technique. After taking the Sous-Vide 101 course, professionals will be able to: • Examine the history of sous vide • Distinguish between traditional and sous-vide methods of cooking • Identify the steps to safely cook in sous-vide method • Select proper equipment for sous-vide method of cooking • Identify the FDA-required HACCP procedures used with sous-vide method of cooking Professionals will have 90 days to complete this self-paced, fully online course. Through Kendall's online learning interface, professionals will have access to Kendall chef-instructors and members of the CREA team, including Bruno Goussault, via the built-in bulletin board, to respond to questions pertaining to the course. Each module ends with a recap quiz, and at the end of the course, professionals will take two exams; one specific to the sous-vide HACCP, the other for the fundamentals of sous-vide course completion certificate."

At least not as expensive as the "Fast-track" non accredited school here that wanted somewhere around 5-8k for a program.

Wow, if it directs you to Kendall then I think it's crazy that they are saying that Thomas Keller, Heston, and others are alumni. How can they make such claims.

The place has been around longer than I've been alive, and I just turned 40 last month. The founder is Bruno Goussault, who was a very important figure in the development of sous vide cooking in the 70s. Five minutes on the Google Box indicates this appears to be a properly legit organ-i-zation.

Ah, I see. It's the program that Kendall must be running now. Hmmm, well for less money one now has the option of buying M.C..

At this year's National Restaurant Show in Chicago they had a booth with Kendall. I spoke to the people there to find out what's different. They are really nice people, but seemed taht you dont really get more information than at ChefSteps. Actually, I've seen videos of Bruno teaching sous vide before and it was kind of confusing and seemed more complicated than it needs to be. Also they don't have a commu it's and the ongoing support that ChefSteps has. If you are not only interested in sous vide, CREA is a one time gig. ChefSteps just announced to roll out a new course!
MC is an awesome reference book, but I wouldn't say it teaches sous vide.
