Awesome things made of corn...

I'm drawing a blank. I'm going to be doing a dish with a SV then smoked short rib, what could loosely be referred to as baked beans, sauces and garnishes, several kinds of pickle from sour to sweet... and wanted to add something corn based.
But a bit different...
From where I'll be serving I'll not really have any means of finishing - all I'll have is a water bath, blow torch and bains marie, but I can put in a lot of effort prior to service.
I've got an isi whipper in the mail and was thinking of experimenting with a microwaved corn based cake, dusted with a fairly spicy powder and a little lime zest when it arrives.
Also waiting on a batch of N-Zorbit. Was thinking of experimenting with the corn balls from MC adapted from Wylie Dufresne (i think... haven't got the books to hand)
I'm opening up to the collective wisdom of the forum - has anyone done any corn based recipes that they can highly recommend (apart from grilled corn on the cob!!). I'm interested in trying just about anything. Modernist or not, I don't mind. Just as long as it's something people haven't really seen before!
If all else fails, I may just do some cornbread... With jalapenos... Mmmm

You should check out the elote recipe from MC. It is kind of like grilled corn but I like to just torch it to make it simple, tastes great and is a fun preparation.

A few ideas: freeze dried corn kernels have a great flavor and texture. You can find the "Just Veggies" brand at Whole Foods, e.g. There is also Grant Achatz' corn sheet-sauce made by pureeing and cooking corn kernels until the natural starch thickens it. Oh, and I was working on making something like peanut butter but from Corn Nuts. If you do cornbread, try doing it with brown butter, that's awesome.

Thanks Brendan, I'll have a look at that one - I love the flavour of slightly charred corn, just couldn't work out how I could produce it rapidly with limited equipment so that might be perfect.
And Michael, I'm loving the suggestions. Is the corn sheet-sauce in the Alinea cook book? as that's another exciting thing I've got coming in the mail
Corn nuts hadn't crossed my mind so far either, but I really like that idea too.. Corn nut butter on cornbread? Now that's something I have to try!

A really simple on is just to cut the corn off, torch roast and toss with a nice pico de gallo.

In the past I would puree tins of creamed corn and then dehydrate them into corn chips. Adding spices to the puree can give you a corn product for adding texture to a dish.
