Last minute Jackolantern.....for dinner. Smoked cheese poached broccoli stem, hair - open flame kale (that was poached in the left over smoked duck fat from the crumble reduction), with brown butter almonds, eyes- horseradish celery root puree and garlic pommes puree, eyebrows - smoke brined (modified CS smokerless recipe) duck breast, with smoked duckskin crumble, nose - hazelnut/butternut squash with caramelized salsify, ears - raspberry vinegar pickled beets, smile - caramelized salsify puree with smokerless pork shoulder teeth topped with smoked bbq duck and pork (dork??) sauce.
The smokerless duck breast was absolutely delicious and I would highly recommend applying the CS technique here.
